Nouvelle Cuisine

Literally meaning “new cuisine”, nouvelle cuisine was a revolutionary culinary movement pioneered in France in the 1970s. By the 1980s, the movement had spread globally and dominated the high-end dining landscape of the decade.

The term “nouvelle cuisine” became synonymous with microscopic portions, extravagant presentation, and eye-watering restaurant bills.

Food critics Henri Gault and Christian Millau famously listed their “Ten Commandments” of nouvelle cuisine, which included sharply reducing cooking times to retain texture and colour; banning heavy, flour-based sauces; replacing large menus with a small selection based entirely on what was fresh at the local market; and leaning heavily into nutrition and health, matching the booming 1980s fitness and aerobics culture.

While pioneering chefs used immense skill, the fad became highly distorted when thousands of mid-tier restaurants worldwide rushed to copy the trend. This led to cliches and gimmicks with plating turned into a competitive art form.

Giant, oversized white plates were used to serve comically tiny portions – such as a single scallop resting on a thin swirl of sauce, or a solitary baby carrot – and food was meticulously arranged using geometric lines, starburst patterns, raspberry purée squiggles, and perfectly fanned-out vegetable slices.

Diners routinely complained about leaving five-star restaurants completely starving and having to stop by McDonald’s on the way home.

By the late 1980s, the public and food critics had rebelled against the pretentiousness, and the term “nouvelle cuisine” effectively became a pejorative for an overpriced rip-off. This cultural backlash paved the way for the rise of 1990s comfort food, rustic Italian bistros, and the birth of global fusion cuisine.

The movement successfully changed how restaurants cooked, and almost all modern fine dining still relies on beautifully aesthetic plating, lightened sauces, short cooking times, and a strict focus on seasonal, local ingredients.

French chef Paul Bocuse, widely regarded as the father of ‘nouvelle cuisine’, died on 20 January 2018, aged 91. He died in the bedroom in which he was born.
